How it's calculated

Contribution per cover = average check × (1 − variable cost %). Break-even covers = fixed costs ÷ contribution per cover. Fixed costs are what you pay whatever the volume (rent, salaries, insurance, loan payments, subscriptions). Variable costs move with sales.
